With clear and distinct flavors and a delicious balance between sweetness and acidity, this coffee is superbly enjoyable to drink and keeps you coming back for another sip. The primary notes are sugar cane, toffee, and lemon which are initially revealed in the aroma of the dry grounds before becoming much more noticeable with the first taste. The sweetness is raw and slightly herbal just like fresh sugar cane juice, and there is a touch of a lemongrass note which provides a nice brightness to the overall flavor. Mirroring the sweetness is an inviting taste similar to caramel or toffee, which is then met by the sweet finish of a lemonade-like citrus that rounds out the cup. This coffee will be roasted to a light (city) roast.

This coffee comes from La Cañera, a small farm located at 1540 MASL in southwest Honduras. The farm is owned by Teodosa Reyes and produces coffees of the Pacas and Paraneima varietals. This specific lot is a washed process Paraneima which was processed by a small wet mill on Teodosa’s farm.
