Colombia Julio Cesar Madrid Tisnes

This coffee comes from Finca Milan, a farm located at 1650 MASL in the Andes Mountains in Colombia’s Risaralda Department. The farm is owned by Julio Cesar Madris Tisnes and his family, and he is also responsible for the unique processing of this coffee at his other farm Finca La Riviera.

Julio experiments with a number of different processing methods including the basics like washed, honey, and natural, but also cold press, culturing, and various fermentation processes. This specific lot is a “culturing nitro fermentation washed process” which means the beans were stored at a cool temperature, pulped/washed, inoculated with starter cultures of yeast and bacteria, sealed and surrounded by nitrogen gas, left to ferment in a controlled bioreactor, and finally dried and rested. The end result of this special processing method is a clean base flavor from the beans initially being washed combined with distinct but not overwhelming tastes from the fermentation process.

The coffee is predominantly sweet and fruity with main notes of blueberry, watermelon, lemon, and lime. The aroma reminds me of something between blueberry pie, honey, and lemonade. Those same notes follow through into the flavors of the cup with an initial hit of lemon that is surrounded by tastes of blueberry or watermelon flavored bubblegum. The aftertaste is distinctly blueberry - kind of like the feeling you get after taking a bite of blueberry pie that pushes you towards taking another bite, or in this case another sip. The unique processing method that combines a washed processed coffee and controlled fermentation creates interesting flavors that are strong and distinct without being overly “funky”. This coffee will be roasted to a city light roast to best display the characteristics and flavors of it.
